When to look for Concorde Pears: A late season pear, Concorde comes into season two weeks after Conference, around the same time as Comice. Look for Concorde the second week of October.

Best Uses For Concorde Pears: Concordes have all the sweetness and suppleness of a Comice, but hold their shape better and do well as sweet highlights in a salad. They do not brown when sliced, and are perfect paired with cheese or used as a decoration for a cake or crisp.

How to Store Concorde Pears: To quicken up the ripening process, place pears in a paper bag on the counter and wait a day or so. Pears bruise easily, so make sure they aren't rolling around in your crisper!
